The News
|
|
Big one this issue: Finca Primer Paso — our own farm plot in Colombia — is officially underway.
Over the coming months we're taking you along for the whole journey: digging into the soil condition, planning
growth strategies, and cupping samples as they arrive — all before the first Primer Paso beans land in Stuart
late this year. Farm updates will go out only to our Farm Updates subscriber list, so if you want the education
(and the first taste), get on it.

Our bags just got bigger. The price didn't.
Every bag of coffee on our website is now 12 oz instead of 10.9 oz, at exactly the price it
was yesterday.
Here's why. Last year, when green coffee prices went genuinely crazy, we raised our prices by about a dollar a
bag — roughly 5% — to cover it. A good piece of that was tariffs. We've since gotten most of those tariff
payments back, and rather than quietly keep the difference, we'd rather hand it to the people who stuck with
us through the increase. So it's going back into the bag.
We know it's 1.1 ounces. We're not pretending it's a windfall. It's a small token of appreciation for the
people who actually care how this coffee gets sourced, and who've come along for the ride while we all
navigate a commodity market that rarely makes life easy for a small roaster.
One note while we transition: our new bags are printed at 12 oz, but you may still see a 10.9 oz label on the
shelf for a little while as we work through the old ones. Every bag sold on the website is 12 oz.

What's Brewing
|
|
Rwanda PB Muhari — a washed peaberry from the Muhari washing station, grown at 1,800–2,200
masl. Black tea, honey, tangerine; roasted medium-light for a clean, bright, tea-like cup. This one was made
for pour over.
|
|
|
Talon's Rwanda Pour Over
• Coffee: 22 g • Water: 350 g (1:16)
• Temp: 202°F
• Grind: medium — we run a 7 on the shop's Mahlkönig; about a 5 on a
Fellow Ode at home
• Brewer: Hario V60 +
filter, rinsed
• Water: 1 gallon distilled + a Third Wave Water packet
Pour schedule
• 0:00 — bloom with 45 g, let it sit 45 seconds
• 0:45 — pour to 120 g, let it drain
• 1:30 — pour to 250 g, let it drain
• 2:10 — final pour to 350 g
Total brew time 3–4 minutes. The long bloom and staged pours are what pull the tangerine
brightness forward without losing the honey sweetness underneath.

Houblon Chouffe — Belgian IPA, tripel backbone with a hop punch
Gouden Carolus Cuvée van de Keizer — Het Anker's imperial dark, rich and warming
Chimay Cinq Cents — Trappist tripel, peppery and bright
Westmalle Duo — Trappist, 7.2%, draft only
De Garre — the Bruges tripel; deceptively smooth for its strength
Liefmans Peach — fruit beer, easy and refreshing
Lindemans Framboise — raspberry lambic, sweet-tart and jammy

What We're Listening To
|
|
Seafret — Tell Me It's Real. A long-time favorite of Mike and Stef's, and one that
still gets pulled off the shelf constantly around here. Impeccable melodies, driven by Harry Draper's beautiful
guitar playing and the swooner tone of Jack Sedman — two friends who met on the open-mic circuit around
Yorkshire and have sounded like they've been playing together forever ever since.
Start with "Atlantis" — for our money one of the best songs on the record. Then go watch the
video for "Oceans," which stars a very young Maisie Williams a few years before
Game of Thrones made her a household name.
